applesA breakfast (or anytime) treat my mom makes for special occasions. It is similar to a Dutch baby, but includes apples and cinnamon.

6 eggs

1 ½ c. milk

1 c. all-purpose flour

3 Tbsp. granulated sugar

1 tsp. vanilla extract

½ tsp. salt

¼ tsp. cinnamon

4 Tbsp. butter

3 apples, thinly sliced (peeled optional)

3 Tbsp. brown sugar

  1. Preheat oven to 425 degrees.
  2. In a blender or large bowl mix eggs, milk, flour, sugar, vanilla, salt and cinnamon until blended. Batter will be lumpy.
  3. Melt butter in a cast iron skillet or 13”x 9” baking dish in the oven.
  4. Add apple slices to the skillet or baking dish and return to oven until butter sizzles. Do not let brown. Remove from oven.
  5. Pour batter over apples, sprinkle with brown sugar.
  6. Bake in the middle of the oven for 20 minutes or until puffed and brown. Serve immediately. I recommend eating it with maple syrup, honey or jam.
